Powered by social networks, the new Poulet Royale banner has had a great start with many customers from all over Quebec since its launch almost two months ago in the Pyramide de Saint-Foy.
The newest project from the Blanchet Morenci Group specializes in grilled chicken bowls and fried chicken. It's essentially a combination of Poulet Rouge and Chick-fil-A, two currently popular chains.
“We saw an opportunity with chicken bowls, which have really become a category, similar to poutine or burgers, and no one has really developed the full potential. As for fried chicken, Quebec has almost no offering except for one big chain,” explained co-owner Nathan Todd.
“It's funny because when we started the concept, we thought we would sell 70% bowls and a little 30% fried chicken, which we thought was a plus. In the end we sold a lot more than we thought, in fact it was almost the opposite,” added the co-owner of Au Petit Chalet restaurants.
The effect of Tiktok
The social network TikTok also allowed Paulette Royale to become famous much faster than expected.
“We had four good days to start, but nothing crazy, it was normal traffic. I posted a video on Thursday and the next day, there was a line of several meters outside the restaurant. It really gave us a good start and allowed a lot of people to taste our product, ” he enthuses.
Less than two months after opening, internet users are now coming from the four corners of the province to test the fried chicken and review it on social networks.
Benefiting from its strategic locations, Nathan Todd expects traffic to pick up again when students return to school in late August.

Without wanting to speculate too much on locations, Nathan Todd confirmed Newspaper Several other branches of Paulette Royale should spring up over the next year, notably in the Greater Quebec region and Montreal.
“With the success and rapid response we have had, we already know that the channel will be a huge success. So we have worked very hard in the last few weeks to develop the franchise and we are ready to open the valves very soon,” stated the founder.
“We already have a number of premises owners who have approached us and are interested in setting up, so it's only a question of time,” concluded the entrepreneur.
