Pizza maker Steve Speciale, who owns Pizza Vera’s restaurant in Quebec City, serves authentic Neapolitan pizza at his establishment.

This culinary practice is one such institution that has been inscribed on the Representative List of the Intangible Cultural Heritage of Humanity by UNESCO since December 7, 2017.
The technique of cooking this type of pizza is taught in schools in Naples, Italy, but some apprentices can also learn the art in Neapolitan families.
“It’s how we want to protect and give to people through what we do,” explained the pizza maker.
Steve Speciale and his team are among the few recognized in Canada by the Associazion Verace Pizza Napoletana. He trained in Italy.
Moreover, all the ingredients in his restaurant come from Italy, except for the mushrooms.
His team included Luigi Coronella, Pietro Davino, Riccardo Casella and Giovanni Campisi. Together they have more than 60 years of experience making pizzas in the city of Naples.
