Crispy ramen-crusted chicken tenders with sweet and sour chili sauce

Ingredients

Chicken

  • 4 chicken breasts
  • 1 cup (250ml) rice flour
  • 2 beaten eggs
  • 3 x 85g packets of store-bought instant ramen noodles
  • 1 c. Tablespoon (15ml) canola oil

Thai chili sauce

  • 1 cup (250ml) caster sugar
  • 1⁄4 cup (60ml) rice vinegar
  • 3 Thai chilies
  • 4 cloves of garlic, finely chopped
  • 1 c. teaspoon (5ml) fine salt
  • 1⁄2 cup (125ml) water
  • 1 chopped green onion

Sesame Broccoli

  • 2 Broccoli cut into small florets
  • 3 tablespoons. Tablespoon (45ml) sesame oil
  • 1 clove of garlic, chopped
  • 2 tablespoons. Tablespoon (30ml) minced ginger
  • 3 tablespoons. tablespoons (45ml) sesame seeds

  • 1⁄2 cup (125ml) homemade or store-bought kimchi
  • Coriander leaves

Step 1: Preheat air fryer to 375F (190C). Then cut the chicken breasts into strips (5-6 per breast).

Step 2: In a bowl, place the flour. In another, beat the eggs and in a third, crush the crispy ramen noodles (I suggest using a food processor to get fine, but still textured pieces). Then bread the chicken strips English style. (1. Flour 2. Eggs and 3. Ramen). Place the breaded chicken strips in the air fryer and cook for 10 to 12 minutes.

Step 3: Meanwhile, in a small pot, whisk the vinegar and powdered sugar well for 1 minute. Then, in a mortar, pulverize the garlic cloves and chilies (2 seed chilies and 1 seed) until large chunks remain. Then add the sweet vinegar mixture and add the water. Cook for 7 to 8 minutes to reduce and thicken the sauce. Then cool and add green onion slices.

Step 4: For the broccoli, in a large pan, heat the sesame oil and fry the florets until browned. Then add garlic and ginger and a splash of water to create a little steam. Top with sesame seeds and season with salt and pepper to taste. Serve in the center of the plate, coat the crispy chicken fillets with the sweet and sour sauce, and serve on top of the broccoli. Garnish with some coriander leaves and kimchi to taste.
