Although replacing butter in a restaurant kitchen can be difficult, one chef offers tips to reduce its use and save money.

“Butter is irreplaceable, but there are ways to reduce its consumption,” explains chef and host, Danny St-Pierre.

For this chef, butter is difficult to replace because it is used in small quantities.

However, he recommends that people who prefer margarine continue to use this alternative product.

“There are people who like margarine and it’s a matter of taste. Olive oil is also very expensive”, underlines the chef.

When butter is used to cook food, equivalent products can be used.

“If you want to cook a steak, we add a little oil over high heat. We are able to color our steak and only at the end do we add a knob of butter to keep the flavor,” he says.

You can save on the cost of meat by running specials and freezing large quantities. After that, you can use butter to spice up your meal.

“The key to appreciating luxury foods is to cook them well and not waste food,” says the chef.
